Abstract


Berry fruits are small-sized, brightly colored fruits with a tart flavor. They have nutraceutical potential due to their high content of bioactive compounds. The dominant bioactive components in berry fruits are antioxidants, which can be used in the treatment of various diseases, including anti-inflammatory, antidiabetic, and cardiovascular prevention. The food processing industry must consider the preservation of these bioactive compounds during the food processing process. One evolving method for maintaining these active compounds is non-thermal processing.
